How to Keep Live Lobster Before Cooking
Your live Welsh lobster has been carefully packed in Tenby for its journey from the Pembrokeshire coast to your door. Follow this live lobster care guide to keep your lobster cool, damp and in the best possible condition before cooking.
01
On Arrival
Open your delivery box as soon as possible. Keep your lobster cool, damp and away from direct sunlight or heat.
If you are not cooking it straight away, keep it refrigerated in suitable ventilated packaging. Keep the gills from drying out with clean damp material such as seaweed, cloth or paper.
02
Keep Cool & Damp
Keep the lobster cool and maintain humidity with clean damp material. It should be damp rather than soaking wet.
Avoid direct contact with ice or frozen gel packs and never leave the lobster sitting in melted ice or pooled water.
03
Never Use Fresh Water
Do not place a live lobster in fresh water. Lobsters are marine animals and should not be submerged in tap water.
Keep handling to a minimum and keep the lobster somewhere quiet, cool and away from bright light.
BEFORE COOKING
Preparing Your Live Lobster for Cooking
Have your cooking equipment and ingredients ready before removing your lobster from cool storage. Keep the claw bands in place while handling and minimise unnecessary handling.
Use an appropriate humane stunning and killing method before cooking. Chilling can reduce activity, but it should not be relied upon as the killing method.
Please Don’t
- Place your lobster in fresh water.
- Leave it sitting in pooled or melted water.
- Put ice or frozen gel packs directly against it.
- Leave it in direct sunlight or somewhere warm.
- Keep it unnecessarily before preparing it.
ALLERGEN INFORMATION: Lobster is a CRUSTACEAN. Please consider crustacean allergies when preparing and serving.
